This is my Grandma’s recipe and it is the best pumpkin anything that I’ve ever had!!!  We have tried a lot of things but this is the BEST hands down!

Pumpkin Bars
What you need:
  • 4 eggs
  • 1 cup oil
  • 1 2/3 cup sugar
  • 1 16oz can pumpkin (or 3 2/3 homemade pumpkin)
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • Cream together eggs, oil and sugar
  • add all other ingredients and mix well
  • Pour in lightly greased casserole dish.  One batch will make an entire 9×13.  (I normally use the large size can of pumpkin and make a double batch.)
  • Bake at 350 for 25-30 min.
Pumpkin Bar Frosting
What you need:
  • 3 oz cream cheese
  • 1 cube butter
  • 1 tsp vanilla
  • 2 cups powdered sugar
  • Cream everything together.  Works best if the cream cheese and butter are room temperature.
  • Do not put on bars immediately.  Wait for them to completely cool first.
Cream together sugar, oil and eggs:

 And everything else:
 (I tried to be cute this year and make them in a ghost and a pumpkin cake pan.  It still tasted good, but it was too tall and more like a cake.  I think it would have been better if I had made 4 instead of doubling and only doing 2.  There was just too much batter in each one.  Stick with the casserole dish or cut this in half when using a cake pan.)
 Cream everything together for the frosting:

I didn’t get a picture of it frosted because it didn’t last long enough!  (Sorry!)  It was too good!
